Posture refers to keeping your spine straight and head up, particularly when in someone's guard. Good posture prevents them from breaking you down and attacking. In closed guard, your posture is their primary target - once broken, they can sweep or submit you. Conversely, on bottom you want to break their posture. Posture is also important standing (wrestling) and when passing guard.
